Chocolate coconut mousse

Updated: Jan 14

This dessert is seriously so good! And it's dairy free, vegan & refined sugar free. Although it's unprocessed, unlike your regular chocolate mousse, it is quite rich so you only need a small amount per person. A great recipe to whip up before you start dinner, so that it has time to thicken into a delicious, velvety mousse.

Serves 2

Ingredients

  • 1 cup coconut cream (leave a can in the fridge overnight & scoop the thick cream off the top).

  • 2 tablespoons raw cacao powder.

  • 1/4 frozen banana.

  • 1 tbsp pure maple syrup.

Blend all ingredients in a blender until smooth. Pour into a medium sized mixing bowl and using an electric beater or whisk, whisk for 3 minutes until thickened. Spoon mixture into small glass cups for serving, and place back in the fridge (covered) to thicken further. After about an hour, the mousse should have a similar consistency as whipped cream.

Chocolate Sauce (optional)

  • 1 tbsp melted coconut oil.

  • 1 tsp raw cacao powder.

  • 1 tsp maple syrup.

Just before you are ready to serve, mix the coconut oil, cacao and maple syrup in a cup until well combined and smooth. Drizzle over the top of each serving of mousse and sprinkle some chia seeds and shredded coconut on top to finish it off.
