Mango Avocado Summer Salad

This salad is a family favourite and is the epitome of a summer salad (in my opinion). Creamy avocado, juicy, juicy mango, crunchy macadamias and a zesty mustard dressing. Simple to make and a crowd favourite for sure!

Ingredients


Salad:

1 cos lettuce, washed and leaves separated

1 mango, peeled and thinly sliced

1 avocado, peeled and thinly sliced

1/2 cup crushed macadamia nuts

1 punnet cherry tomatoes, halved

1/2 red onion, thinly sliced


Dressing:

1 tsp wholegrain mustard

1 tsp Dijon mustard

1 tablespoon fresh lemon juice

1 tablespoon olive oil

Pinch of salt


Method:


Layer the lettuce leaves, mango, tomato and avocado in a salad bowl. Sprinkle the onion and macadamia nuts over the top of the salad, and drizzle the dressing evenly all over.

Serve immediately as a side to your favourite protein. Perfect for summer BBQ's!
