This is such a delicious and chewy sweet treat. It's not too sweet which makes this the perfect for a simple little treat in the morning with a cup of tea. You're welcome to add a tablespoon of maple syrup to the recipe if you would like it sweeter. Ingredients
• 1 cup boiling water • 1/2 cup dried dates • 1/2 cup pure oats (gluten-free) • 1/2 cup LSA • 2 tbsp coconut oil • 2 tbsp almonds • 2 tbsp sunflower seeds • 2 tbsp plain protein powder • 2 tbsp raw cacao • 1/2 tsp vanilla paste • 1 tsp cinnamon • Pinch of Himalayan salt
Directions
Place the dates into a bowl and cover with the boiling water. Leave to soak for 5 minutes.
In a food processor, add the oats and blitz until a crumbly consistency is formed. Drain the dates and add to the food processor along with the remaining ingredients. Blend for 3-5 minutes or until the mixture is well combined and crumbly.
Transfer the mixture to a lined shallow baking tray and press the mixture into the base of the pan with the back of a dessert spoon. Sprinkle a small pinch of Himalayan salt over the top.
Place in the freezer to set for 20 minutes. Once firm, remove from the freezer and slice into squares.
Keep squares stored in an airtight container for a couple of days in the fridge and enjoy!
